Remaking the Macaroni Grill spinach salad.

Ok, I went out to lunch with my friend Tali and tried a wonderful salad of wilted spinach and scallops. (refer to previous post) and attempted to recreat this winner at home. However, it was an unsuccessful attempt, I believe I used to much olive oil.
I thought it sounded like a wise idea to cook the scallops in a little olive oil.(Note to self* pan sear the scallops next time, for go the EVOO)Then added pepper, a little lemon juice, and tossed in the spinach until wilted, here is the end result.


Also the twins had a request for cucumbers today, this is the simple lunch I made for them, it is left over turkey breast I cooked, with sharp cheddar, ELi's favorite.LOL
