no posts lately..

I know , I know I have been slacking in the posts, but it is mostly due to school , and thanksgiving stuff, did so much walking on black friday (well from 10pm thursday to 6 am friday) thought my knee would stop bending , I was in alot of agony, I do not know why it still is hurting to so much! I had a 1 lb gain as a result of this injury(that and the turkey goodies) LOL! Now we have been decoration today and will post my kiss tree to show everyone later!

Stupid knee..

I am having some major knee issues, I can not seem to walk without a limp, and I keep having to pop it , to make it feel better for a while, I am not sure what happened, or why it is hurting, I do not remember if I did anything to hurt it . =(

If you like pumpkin foods, you will love this..

So i was at Trader Joe's out looking for some fresh produce and my eye caught a display, of pumpkin granola, now im not a giant granola fan, but i tasted it this morning, and it is lovely, so pumpkin-y and toasty, very yummy, I recommend this to anyone who eats pumpking things !

425 kcals at KFC, NO WAY!

Yes WAY ! I totally just ate a meal for 425 cals , 2 pc(breast and wing) grilled, green beans and a biscuit, 425- i am seriously freaking out and did not expect such a low amount of cals, i am genuinely ecstatic!

Go me !

I am finally through the plateau and lost a lb, it ,ay be only one pound but i will take it !! and 3 days - binge free, lets hop that streak will continue ! i striving for one day at a time. School is back in session , so I am a little slow posting , getting a masters is no easy task, but I have a new class on labels, that is very interesting !

orange chicken- good stuff !

so this was dinner !

I used one serving of chickenless chicken nuggets- since i had not defrosted the chicken breast in time, which next time i am sure will be even better !

the orange glaze
1 1/2 cups water
2 tablespoons orange juice
1/4 cup lemon juice
1/3 cup rice vinegar (in a pinch you can sub 2 tbsp apple cider vinegar)
2 1/2 tbsp soy sauce
1 tbsp grated orange zest, or 1 tsp orange extract
1 cup tightly packed brown sugar
1/2 tsp freshly minces ginger root (or 1/4 tsp powdered)
1 tsp minced garlic
1/2 tsp red pepper flakes/or cayenne pepper
3 tbsp cornstarch mixed with 2 tbsp water

serve mixed with chicken! 83 cals per serving, serves 12
w/ 1/2 c brown rice
1 c green beans
total meal was : only 423 yummy calories

Ok, so usually anything I buy at Trader Joe's I love, so imagine my delight when i thought I had found a bit of home, in a frozen lunch ! Well everyone this is unusually disgusting, and for 390 cals and 610 mgs of sodium very unworth it !! YUCK ! Talk about ruin my day's palate , since i was using it as a breakfast for me !

Bouncy Bounce and a buffet- YIKES!

Me and the hubs decided to check out a new buffet at Bella Cucina, and it was really good, and I did pretty well if i do say so myself! I had a cucumber salad , and 1 slice of cheese pizza and a few garlic knots, which is a positive step for me. Then off we went with the kiddos to Sky city bounce. We had not been there since their birthday, and this time they had even more fun, they had no freak outs over the instabilities of the toys this time, and was climbing the giant ladders alone, made me so sad as I watched my babies not be such babies anymore =( here are some blurry phone shots of the crazies !

Boycott against Bath & Body works !

This may be a little off my topic, but it bears being posted, I could not believe what I read. Check it out!

Now onto my current tasks at hand, school has started up again and I am up to my neck in workload.. and still unemployed, so my diet feels a little on the backseat. I love the nutrtition class info I started reading this week though =)

I am sure I did not overeat today, and after a few days of chocolate snacking, today I had none , just a little panetone (the bread with dates and nuts in it) yay ! It is a step in the right direction !!

I do not know why I keep faltering in this goal I am trying to reach, I did ok for the most part then almost completely binged on bread and mini candies.. :( I am not feeling much like a great poster right now. Also as I type this I am watching on the Discovery health Channel, about what an obese heart and other organs look like compared to the normal one, Dr. OZ is actually having the girl hold the real heart and liver, etc.. eww! but it just made me feel even worse with my lack of discipline and determination , right now ...

Crockpot healthy cooking, is it possible?

I am on the hunt to get more involved in crockpot cooking and healthy recipes are not easy to find, but I did come across a few sites and will be doing some tests on it! I did my own pork chop in a pot tonight, the kids inhaled it - Ion however was not so thrilled , he hates soft, tender meat (he is the weird one right?*snickers*)

4 pork chops
1 pkg of frozen green beans
2 cans cream of mushroom
2 lbs of baby potatoes (size of mushrooms) - first time using these !
garlic powder - to taste
pepper - to taste
salt optional

throw all in the pot, cook 4 hours on high and *VOILA* Serve over brown rice

was very delicious, again No calorie count, I will start calculating for my recipes on here again , just need some time, so busy..

Not good, but good pie =)

So we went to Ion's family for a celebration, and I brough along the experimental pie to see if it was any good well it was yummy, and the few who ate it enjoyed it it was made with marscapone , pumpkin butter, and a little chocolate, I will update later with the calorie intake, when i put it together for posting but here is a quick pic of it :

On a side note, I am really sore today in my chest and upper arms, being i did not workout yesterday, it must be from the shoulder and chest presses on saturday, I am just shocked it took 2 whole days to kick in ? Highly unusual for me .

A little disappointed in the monitor..

on my new monitor , says 30 mins on my elliptical was 300 calories, which is upsetting that damn machine had me thinking it is usually 400.. :( It did do good as to keep me in a higher heart reate zone because I was watching the beats and trying to stay in the range it has for me, so I hope this will workout in my favor.. but it felt like it won't on my next workout I may just try to do so on the treadmill or bike and see if there is a difference. ugh !

The monitor.

Yay! It is here, it is here. I ordered a heart rate monitor after much consideration and on the search for a good monitor. I found a pink F6 model, that a few people had recommended to me, I love it. I am on my way out tonight to try it at the gym. Let's see how much I can burn 'officially' on that elliptical now! hehe..

Ok, I am sitting , getting ready to steal 1 piece of Halloween candy, as I sit here and debate that I do not need it and will not take one, I end up walking away, YAY ! Then...
I go upstairs to the bedroom and find some romanian chocolate, brought back by Dana, and what would you know.. I eat the whole things..526 calories worth !! I lose another fight. Sometimes I am so stupid and know that I cant afford to eat it and give in anyway..ugh! Tomorrow I shall rise and fight another day =/

The magic bullet rocks..

So I set out to buy the 'magic bullet', hoping it would be a worthy investment, and so far I have made some delish smoothies and one or two other things, I have been making this as my breakfast smoothie:

Now it's not exactly light on the calorie side, but its fairly heavy enough to keep tide over for 3-4 hours. The shake consists of:
1 small banana - 90 cal
2 tbsp Peanut Butter - 190 cal
1 1/2 c. nonfat milk - 135 cal
2 tbsp Hersheys Lite Syrup - 45 cal
Total: 460 cals

Very easy, common and delicious for me , hehe..
